The flavors at Siago are like no other on the island. Featuring our own bar and café, we provide a unique beverage journey. From premium coffee blends to our own homemade concoctions, expect nothing but a pleasant treat for your palette. Our bar is also stocked with the best liquor carefully and thoughtfully selected for that perfect sunset beverage or two.
Inspired by the cuisine of Central and South America, our restaurant fuses traditional and modern techniques, with international influences and contemporary innovation. The food is very much aligned with our ethos: simple, sophisticated yet abounding with flavor. The menu pays homage to memories of travelling; featuring ingredients made from scratch, traditional dishes, and locally sourced produce.
Chef Hanna Sanchez finds grit and inspiration through her love of food.
She was initially a Fine Arts graduate from The University of Santo Tomas which led to her experience in corporate events and advertising where she later realized her true passion – food. She then applied to Global Academy School in Manila, where she learned the meticulous art of kitchen technique and skills.
Recruited by her first mentor in the industry, Chef Meg Victorino, she began her culinary career working for Del Monte. Not long after, she was presented with the opportunity to work at the Ritz Carlton’s AAA Five Diamond award restaurant in Florida, Salt. She was one of twenty chefs exclusively selected amongst hundreds of applicants to work closely with Chef Rick Laughlin and Brandon Dienger.
As her training in Salt came to an end, Chef Hanna decided to move back to Manila and worked with Chef Josh Boutwood at Savage and Helm in Bonifacio Global City. This is where she fine tuned her flavors, palette, and techniques, collaborating with the best chefs in Manila and around South East Asia. Eventually, she found her way to the island to establish and develop a menu for Siago from the ground up.
